Ingredients
• 1/2 cup Tur dal (Aaral dal)
• 1/3 tsp turmeric powder
• 1 teaspoon mustard
• 1 cup chopped mix vegetables
• 5-6 curry leaves
• 1-2 red dry peppers
• 1 pinch hing
• 1 medium Finely chopped onion
• 1 tbspspeed sambar masala
• 1 tbspoon red chilli powder
• 1/2 tbspn tamarind seedless
• 1 tomato finely chopped
• 1 tbsp oil
• 1/2 cup water
• finely chopped coriander
• Salt to taste
Directions
• To prepare tamarind water, soak 1/2 tbsp tamarind in 3 tbsp hot water for 10-15 minutes. Use 3-5 vegetable to make sambar, do not use more vegetables for good sambar.
• Put tur dal, turmeric powder and 1/2 cup water in a 3-4 liter pressure cooker. Put mixed vegetables in a small compartment and put the box in the cooker (you can cook vegetables separately). Put the lid of the cooker and cook it till 3-4 whistles on medium flame, in this recipe we have 1/4 cup potatoes, 1/3 cup brinjal, 4-5 Drumstick (Sahajan) pieces.
• Turn off the gas and let the cooker cool down. When the pressure of the cooker is completed, open the stem and remove the vegetable compartment. Purify the pulse with a spoon or blender.
• In a pan, add 1 tbsp oil to medium flame and let it warm. When the oil is hot, put the rye in it, when it starts to crack, then add dry red chilli, curry leaves, asafoetida and roast it.
• Now roast the onion onion until light pink melts. Put the tamarind water in it and take it for 2-3 minutes. • Now add chopped tomatoes and roast it till it becomes soft. Add sambar masala, red chili powder and roast it for 1-2 minutes.
• Now add boiled lentils and vegetables to it and mix it. Add salt to it. • Let the sambar cook for 5-7 minutes.
• After the Sambar is cooked, turn off the gas and take it in a bowl and put coriander and decorate it.
• You can also eat Sambar with idli, wada, masala dosa.
